I appreciate the fact checking. As with many famous quotes, it appears there is a quite a debate about the origin. It might be that neither actually said that exact quote, but both expressed sentiments along these lines.

A verified quote I could find from Einstein is: “ all physical theories .. ought to lend themselves to so simple a description that even a child could understand them.” History is one big game of telephone, and along the way, the quote has been greatly simplified!
