It’s hard to decide which single technology to support because data science tooling is changing so rapidly. That’s why I personally donate using NumFOCUS as it spreads my donation across many open-source libraries. I support Python because it’s the main language I use in my work but I would encourage you to support whatever tools you use. The important point is to give back to the open-source contributors and help them continue to maintain and develop libraries/languages.
